Our Favorite Chickpea, Sweet Potato, and Onion Burrito

This recipe is an all-time favorite and has become the ultimate vegan comfort food. This burrito would not be the same without Trader Joe’s Greek Chickpeas and Violife Vegan Feta. Seasoned with parsley and cumin, one can of chickpeas has enough oil and seasoning for the whole recipe and the feta cheese is a great way to top it off. This recipe is timeless and can definitely be enjoyed more than once. Pair with our vegan ceviche for the perfect meal. 

Ingredients:
Your favorite tortillas
½ an avocado
One lemon
One large sweet potato (peeled and chopped)
½ a red onion (chopped)
One can of Trader Joe’s Greek Chickpeas
Violife vegan feta cheese

1. Set the oven to 425 degrees.
2. Toss chickpeas, chopped sweet potato, and chopped onion on a pan until the vegetables are evenly coated with olive oil and seasoning.
3. Roast in the oven for 20 minutes, toss, then put them back in the oven for an additional 15 minutes or until they are golden brown.
4. Mash your avocado into the tortilla and top with the juice of a lemon (however much you desire).
5. Add your cooked vegetables and chickpeas, and finish with some vegan feta.
6. Assemble burrito and enjoy it with our vegan ceviche!
