Rainbow Radish Salad

Summer is here and this crunchy rainbow salad is the perfect way to celebrate. This whole food plant-based salad is packed with nutrients and full of flavour. This recipe is a unique way to enjoy raw radishes and other fresh produce. The light apple cider vinegar and lemon based dressing gives this salad a refreshing, citrusy tang. The great thing about this salad is you can add the dressing and not have to worry about it getting soggy. Whether you are taking it to a party or just enjoying it throughout the week, this salad will become your new go-to. 


Ingredients:
6-8 roughly chopped radishes
3 shredded rainbow carrots
½  a cucumber chopped
½ a red onion diced
1 cup of corn
1 can of white beans

½ a green pepper chopped

Dressing
¼ cup of apple cider vinegar
1 lemon juiced 
2 tablespoon of maple syrup
Salt and pepper (as desired)

1. Prepare vegetables and dressing and combine in a large bowl. Serve and enjoy:)
