This vegan ceviche is perfect for enjoying with our vegan tacos or our very popular vegan burrito. The lemon juice in this recipe perfectly compliments the spice from the jalapeño, and this recipe uses hearts of palm instead of fish, which is great because it adds a unique crunch to the dish. You will definitely find yourself making this dish more than once because it is so delicious!

1 can heart of palm  
½ red onion (chopped)
1 cucumber (quartered and chopped)
1 large tomato (chopped)
1 jalapeño (minced)
1 bunch cilantro (finely chopped)
1 cup lime juice
6 radishes (thinly sliced)
½ cup olive oil
1 tablespoon crushed garlic
Salt and pepper

1. After preparing all your ingredients, marinate the onions in the olive oil and lime juice.
2. Add the rest of the ingredients to the onions, lime juice, and olive oil. Let refrigerate for one hour and serve.
