Vegan Chocolate Peanut Butter Orbs

These chocolate peanut butter orbs are our new favorite vegan treat. There is no better way to get your plant- based protein in than during dessert. These vegan snacks are perfect to give to friends and family, (or enjoy alone as a late night snack). Our no- bake truffles are also conveniently sized and include zero added sugar. A food processor is recommended to make this recipe effortlessly fun. All credit goes to Ira Goldberg for creating and sharing this delicious, year- round treat. To make this a nut- free recipe we suggest replacing the peanut butter and peanut powder with soynut butter or sunflower seed butter. To enjoy these orbs for a special occasion we suggest adding toppings such as sprinkles, peppermint or crushed almonds to the chocolate before freezing. The possibilities are endless and we welcome you to make this recipe your own!

Ingredients:
2 cups dates
1 cup almond flour
24 ounces natural peanut butter
1 cup chocolate peanut butter powder
16 ounces dark chocolate chips

Directions 
  •  Mince dates in a food processor until smooth.
  • Add peanut butter and incorporate in the food processor.
  • With the food processor running, slowly add in the almond flour and peanut butter powder. Let fully mix. 
  • Form the mixture into tablespoon size balls. Place on parchment and refrigerate. Let sit for one hour.
  • Place the chocolate chips in a glass or metal bowl and place the bowl over a pot of boiling water. Mix the chips until completely melted.
  • Drizzle the melted chocolate over the orbs and place back in the fridge for one hour.
  • Serve and enjoy.
